The limited access to water and the low annual rainfall means that the vines have to rely on the water holding capacity of the red clay based soil to survive throughout the growing season. The vines can only support a small crop under these conditions and this in turn guarantees ripe, concentrated flavors in the grapes and those qualities are reflected in our hand made premium wines. The vines yield on average around one tonne to the acre.
This limited production of premium Shiraz was made from grapes grown on our Hare’s Chase Vineyard in the Barossa Valley. Basket pressing, followed by barrel fermentation and maturation in American oak for 16 months has provided ripe, fleshy, concentrated wines typical of the region. To retain the individual characters of the vineyard and the fruit neither wine has not been filtered or fined.
