WINE PORTFOLIO
This 100% Shiraz is traditionally dry grown in our vineyard in soils ranging from dark clay to sandy loam formed in a gentle slope leading down to the creek. The 10 year-old, non-irrigated vines are hand pruned to encourage low yields and allow plenty of air and sunlight through the canopy so the fruit may achieve its optimum ripening potential. This results in beautifully developed bunches consisting of small berries tendered by the season and the natural environment from which they are grown. In 2002 the long cool summer meant these grapes had a longer ripening period. The grapes were then hand picked, open fermented, basket pressed, and aged for 15 months in new American oak hogsheads.
