Chef and winemaker Corey Chaplin’s first releases under his Lunar Wines label have just become available through The Grateful Palate. Chaplin sources fruit from vineyards in the heart of the Barossa Valley—Shiraz from Koonunga Hill and Dorrien and Cabernet from Maranga and Greenock—and ages his wines 24 months in French and American oak. Yield are modest, one to two tons per acre, and production of both the 100% Shiraz and the Cabernet-Shiraz blend is small.
