Peter Taylor is a veteran of large-scale production at Fosters/Southcorp/Rosemount, but at Hare’s Chase, a boutique winery that he co-owns with Peter de la Haye, he makes a very limited production 100% Shiraz, as well as Barossa Red Blend that combines Shiraz with Merlot and Cabernet Franc. All the grapes come from Hare’s Chase vines that yield only 2 to 3 tons an acre.
