Galah, the outstanding red sparkling wine from Ashton Hills Vineyard in the Adelaide Hills, is made from ancient Cabernet and Shiraz vines that come from farther north, in the Clare Valley. Yields from the vines, which are up to 112 years old, are less than 2 tons an acre. Winemaker Stephen George ages Galah for five years in very old oak.
